Vegetarian Zha Jiang Noodles

Ingredients
- 2 bunches of scallions
- 1 carrot
- 1 lb wheat noodles
- 1 tbsp soy sauce
- 3 tbsp fermented bean sauce
- 2 tbsp hoisin sauce
- 5 cloves garlic
- 1/2 tbsp minced ginger
- 10 shitake mushrooms
- 1 tbsp vegetable oil high quality
- 5 red chili
- salt
- pepper
Instructions
- Lower wok heat and add soy, hoisin, and bean sauce and mix well. Allow mixture to simmer for 15 mins.
- Cook noodles using instructions on the box, then add to woke and toss in sauce. Add diced scallions, and carrots to the mixture and serve once all the ingredients are equally coated.
