Vegetarian Tacos
Vegetarian Tacos with avocado mayo
Ingredients
Avocado Mayo
- 1 cup mayo
- 2 avocado
- 1 tsp cayenne
- 1 juice of lime
- 1 tsp salt
- 1 tsp pepper
Tacos
- 1 lb potato
- 1/3 cup canola
- 1 tbsp onion powder
- 1 tbsp garlic powder
- 1 tbsp mustard powder
- 1 tbsp paprika
- 2 tbsp rice vinegar
- 1 tsp salt
- 1 tsp pepper
- 6-8 flour tortilla
- 2 limes
- 1 red onion diced
- 1 chopped lettuce
Instructions
Avocado Mayo
- Smash avocado
- Mix salt, pepper, cayenne, lime juice and mayo
- Using electric mixer evenly mix avocado with mayo
Tacos
- Heat oven to 400 F
- Cut potatoes into small quarters and place in bowl
- Coat with oil, and then evenly coat with spices and vinegar
- Cook for 20 min or until golden brown
- Heat tortilla, and coat with avocado mayo, fill with red onions lettuce, and potatoes
