Vegan Sausage & Peppers over Cauliflower Rice
Vegan, gluten-free susage and peppers served over Cauliflower Rice
Ingredients
- 4 Vegan Sausages
- 2 Green bell pepper
- 1 Yellow Onion
- 4 cloves Minced garlic
- 1 tbsp Oregano
- 1 tbsp Basil
- 6 oz Tomato paste
- 2 tbsp White wine
- 1 Head of Cauliflower
- 1/4 tsp Kosher Salt
- 1/4 tsp Coarse ground pepper
- 2 tbsp olive oil
Instructions
- Rough chop Cauliflower and pulse in food processor to make rice
- Long chop peppers and onions, and cut sausage into bite sized pieces
- Heat pan over medium heat, and sauté peppers, onions, sausage, garlic, and spices with 1 tbsp olive oil
- Once onions are translucent add white wine, and tomato paste, add salt and pepper to taste
- Cook cauliflower rice over medium heat for 4-5 minutes, add oregano, basil, salt and pepper to taste
