ATX BBQ Brisket
Texas style BBQ brisket

Ingredients
- 1 brisket flat Make sure to trim off any large fat deposits as they will not render off well
- 1 cup kosher salt
- 1 1/2 cup course ground peppercorn
- Pecan or apple wood
- 1 cup apple cider vinegar
- 4 cup water
Instructions
- Heat smoker to 250 F make sure that smoker water pan is full
- Mix salt and pepper and evenly coat entire brisket, and allow brisket to come to room temperature
- Maintain 250 F through entire cook process spraying with a mixture of water and apple cider hourly. Total cook time should be roughly 1 hr per lb
- After brisket reaches 175 F internal temperature stop all spraying, cook until internal 195 F
- Wrap brisket in butcher paper, and allow to sit for an hour or until it reaches 165 F internal
- Cut into 1/4 inch slices and serve. Brisket should rip apart with no effort with hands
