Salmon Toast
Cured salmon over toast with a tzatziki sauce
Ingredients
Tzatziki
- 1/4 cup Greek yogurt
- 1 tsp white vinegar
- 1/4 cucumber
- 1/4 tbsp garlic powder
- 1 tsp extra virgin olive oil
- 1/4 tsp kosher salt
Cured Salmon
- 1/2 lb salmon Alaskan, or high grade recommended
- 4 cup kosher salt
- dill
- lemon or lime
- 1/4 red onion
- capers optional
- 4 pieces of toast
Instructions
Tzatziki
- Peel skin from cucumber and grate into a bowl
- Add the remaining ingredients into bowl and mix evenly
Cured Salmon
- Remove skin from salmon
- Take tinfoil and add 2 cups of salt
- Place salmon in tinfoil and cover completely with remaining salt
- Leave in fridge for 48 hours until fully cured, and all liquids have been absorbed
- Thinly slice, and place on toast with tzatziki, diced red onion, dill, and squeezed citrus
