Fried Rice

Simple Fried Rice Recipe

Ingredients
  

  • 3 tbsp vegetable oil high quality
  • 2 large eggs
  • 2 carrots diced
  • 1 onion diced
  • 1/2 cup peas
  • 2 cloves garlic minced
  • 1 bunch scallions
  • 3 tbsp soy sauce
  • 1 tbsp mirin
  • 2 cups day old rice if leftover rice is not available, cook then chill rice in freezer for 15 minutes

Instructions
 

  • Heat pan with 1 tbsp oil over medium heat and scramble eggs, breaking the eggs into large chunks as they are cooked. Remove to separate plate once light and fluffy
  • Add additional tbsp to pan and add carrots, peas, garlic, and onion. Cook until onion is translucent. Add remaining oil, and mix in rice with the soy sauce, mirin, and scallions. Fry for 3-5 minutes continually stirring the mixture. Add egg into mixture to heat up then serve
