Kimchi Bokkeumbap

Korean fried rice with eggs, and kimchi

Equipment

  • Rice cooker

Ingredients
  

  • 2 cup rice
  • 4 jumbo eggs
  • 1 small onion
  • 1 carrot
  • 1 cup kimchi see notes for recipe
  • 3 tbsp kimchi juice
  • 1 tbsp soy sauce
  • 1 tbsp chili paste
  • 1/2 tbsp sesame seed
  • canola oil
  • chives
  • kosher salt
  • coarse ground pepper

Instructions
 

  • Cook rice in rice cooker based on recommended instructions on rice cooker
  • Dice onion and carrots, and sauté with canola oil until soft
  • Add rice, and remaining ingredients except for egg, and cook 3-4 minutes on high heat
  • Fry eggs and place on top with chives
