BBQ Smoked turkey

Ingredients
Turkey
- 12 lb turkey
- 2 tbsp paprika
- 4 tbsp garlic powder
- 2 tsbp mustard powder
- 2 tbsp celery seeds
- 1/4 cup kosher salt
- 1/2 cup coarse ground salt
- 1 bundle thyme sprigs
- 1 lemon halved
- 1 head garlic halved
- 1 small small onion quartered
Brine
- 1 gallon water
- 1 cup kosher salt
- 2 stalk celery roughly chopped
- 1 small onion rough chopped
- 3 tbsp peppercorn
- 6 bay leaves
- 1 head garlic halved
- 1 bunch thyme sprigs
- 1 tbsp mustard seeds
Instructions
Brine
- Combine all brine ingredients, and bring to a light simmer then remove from heat
- Once cooled place turkey in brine for 4 hours
Turkey
- Remove turkey from brine and pat dry, evenly season entire turkey
- Place onion, garlic, lemon, and thyme inside of turkey
- Heat smoker to 250 F, and place turkey on smoker
- Smoke at 30 mins per lb (roughly 6 hours), every half hour spray turkey with canola oil to help crisp skin
- Once turkey reaches 180 F remove, and allow 15 minutes to cool to 165 F
