Austrian Beef Goulash & Nosterl
Ingredients
Beef Goulash
- 2 lb short rib
- 4 large onion
- 1 tbsp fresh marjoram
- 1 tbsp ground caraway seeds
- 4 tbsp high quality paprika (Hungarian or homemade)
- 6 cayenne peppers
- 6 bay leaves
- 6 oz tomato paste
- 1/2 tbsp white vinegar
- 2 cup water
- 3 tbsp beef fat
Nosterl
- 2 jumbo eggs
- 1/4 cup whole milk
- 1 1/2 cup all purpose flour
- 1/2 tsp kosher salt
Instructions
Beef Goulash
- Brown Short rib for 4-5 mins on medium heat with 1 tbsp of beef fat, and set aside
- Slice onions, dice cayenne pepper, and add caraway seeds, marjoram. Sautee over medium heat with the remaining beef fat until onions are caramelized
- Once onions are caramelized add tomato paste and paprika, and mix evenly
- Add water and vinegar and blend until it is a smooth consistency
- Return sauce to pan and add beef, simmer for 3 hours until beef pulls apart
Nosterl
- Whisk all ingredients until consistent texture and no lumps
- Form small dumplings with hand
- Boil water with salt and cook for 1-2 minutes
