Chicken Waldorf Salad
Chicken salad with apples, nuts, raisins, and celery great for sandwiches or as is
Ingredients
Chicken
- 1 Large chicken breast
- 1 tbsp olive oil
- 1/2 tsp salt
- 1/2 tsp pepper
- 1 tbsp mustard powder
Salad
- 2 medium apples
- 1/2 cup craisins raisins work as well see notes
- 2 celery stalks
- 1/2 cup pecans
- 1 tbsp olive oil
- 1 cup grapes
Dressing
- 1 cup greek yogurt
- 1/2 cup mayo preferably homemade
- 2 medium oranges juiced
- 1/4 tsp salt
- 1/4 tsp pepper
- 1 tbsp lemon juice
Instructions
- Coat chicken with olive oil, salt, pepper, and mustard powder
- Cook chicken at 350 F for 35-45 minutes until golden brown
- Roast pecans in pan with olive oil for 3-4 minutes on high heat until lightly toasted
- Mix all dressing ingredients with electric mixer (mayo, Greek yogurt, orange juice, salt, pepper, and lemon juice)
- Dice apples, celery, and slice grapes
- Mix chicken and dressing with electric mixer until chicken is a pulled consistency
- Fold in all other ingredients by hand until evenly distributed
