Caribbean Whole Fish Red Snapper

Ingredients
Red Snapper
- 2 Whole snapper Descaled, gills removed
- 1 Onion
- 2 cloves Garlic
- 2 tbsp cilantro culantro if available
- 3 Limes
- 3 Lemon
- 1 pineapple
- 4 cup kosher salt
- 2 tbsp olive oil
Asparagus
- 1 bunch Asparagus
- 1 cup Cherry Tomato
- 2 tbsp olive oil
- 1/4 tsp kosher salt
- 1/4 tsp coarse ground pepper
Instructions
Red Snapper
- Descale, degill, and cut red snapper so that the whole fish can be stuffed. Do not butterfly
- Coat inside and outside of fish with olive oil
- Dice onion and pineapple, mince garlic, and slice lemons and place inside snapper
- Juice lime over red snapper
- Prepare tin foil and cover with salt, wrap snapper in tinfoil so the entire fish is covered by salt
- Heat grill to 400F and cook on both sides for 4-8 mins. Flesh should be flakey when done
Asparagus
- Coat asparagus and tomato with olive oil salt and pepper
- Cook asparagus on grill until tender
- After asparagus is cooked char cherry tomatoes on grill
