Caribbean Whole Fish Red Snapper

Ingredients
  

Red Snapper

  • 2 Whole snapper Descaled, gills removed
  • 1 Onion
  • 2 cloves Garlic
  • 2 tbsp cilantro culantro if available
  • 3 Limes
  • 3 Lemon
  • 1 pineapple
  • 4 cup kosher salt
  • 2 tbsp olive oil

Asparagus

  • 1 bunch Asparagus
  • 1 cup Cherry Tomato
  • 2 tbsp olive oil
  • 1/4 tsp kosher salt
  • 1/4 tsp coarse ground pepper

Instructions
 

Red Snapper

  • Descale, degill, and cut red snapper so that the whole fish can be stuffed. Do not butterfly
  • Coat inside and outside of fish with olive oil
  • Dice onion and pineapple, mince garlic, and slice lemons and place inside snapper
  • Juice lime over red snapper
  • Prepare tin foil and cover with salt, wrap snapper in tinfoil so the entire fish is covered by salt
  • Heat grill to 400F and cook on both sides for 4-8 mins. Flesh should be flakey when done

Asparagus

  • Coat asparagus and tomato with olive oil salt and pepper
  • Cook asparagus on grill until tender
  • After asparagus is cooked char cherry tomatoes on grill
